Ingredients
For the mashed potatoes:
2 lbs Idaho potatoes
8 Tbsp cannabutter
3/4 cup whole milk
1/2 tsp kosher salt
1/4 tsp pepper
For the gravy:
4 tbsp cannabutter
1 small onion, minced
1 cup beef broth
1 tbsp heavy cream
1/2 tsp kosher salt
Instructions
Mashed Potatoes:
Wash and peel potatoes. Cut potatoes into smaller cubes to decrease cook time and allow them to cook more evenly.
Place potatoes into a large pot and cover with cold water. Bring to boil and reduce heat. Simmer until fork-tender.
Drain potatoes in colander and return to pot. Add cannabutter, milk, salt and pepper. Mix with electric mixer until desired consistency is reached.
Gravy:
Melt cannabutter in a large sauce pan over medium heat. Sautee onion until lightly brown.
Add flour and cook for 1 minute, whisking constantly.
Whisk in beef stock and cook uncovered until thickened (about 5 minutes), stirring frequently.
Whisk in cream and salt.
Pour over hot mashed potatoes, ensuring you have cleared your schedule for the evening first.
